Ingredients:
- 1 small cauliflower, cut into florets
- 2 medium potatoes, peeled and diced
- 1 green bell pepper, diced
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 small brinjal, diced
- Handful of fresh coriander leaves, chopped
- 2 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- Salt to taste
Instructions:
1. Heat vegetable oil in a large pan over medium heat.
2. Add cumin seeds and let them splutter.
3. Add chopped onion and sauté until translucent.
4. Add diced potatoes and cauliflower florets. Cook for 5 minutes, stirring occasionally.
5. Add diced brinjal, green bell pepper, and chopped tomatoes. Mix well.
6. Add turmeric powder, coriander powder, red chili powder, and salt. Stir to coat the vegetables with the spices.
7. Cover the pan and let the vegetables cook for about 15-20 minutes, or until they are tender.
8. Once the vegetables are cooked, garnish with fresh coriander leaves.
9. Serve the mixed vegetable curry hot with rice or bread.
