Ingredients:
- 1 cup Basmati rice
- 1 cup sliced mushrooms
- 1 cup cubed tofu
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 red bell pepper, sliced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
- Green onions for garnish

Instructions:
1. Cook Basmati rice according to package instructions and set aside.
2. In a large skillet or wok, heat sesame oil over medium heat.
3. Add garlic and ginger, sauté for 1 minute until fragrant.
4. Add diced onion and sliced mushrooms, cook until mushrooms are tender.
5. Push the vegetables to one side of the skillet and add cubed tofu to the other side. Cook until tofu is lightly browned.
6. Combine tofu with the vegetables and add cooked Basmati rice to the skillet.
7. Pour soy sauce over the rice and stir well to combine all ingredients.
8. Season with salt and pepper to taste.
9. Stir-fry everything together for a few minutes until heated through.
10. Garnish with sliced green onions before serving.
