Ingredients:
- 2 chicken breasts
- 1 cup rice
- 1 tablespoon paprika
- 1 head of broccoli
- Salt and pepper to taste
- Olive oil
- 2 cups chicken broth
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Season the chicken breasts with salt, pepper, and paprika on both sides.
3. In a large skillet, heat some olive oil over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
4. Remove the chicken from the skillet and set aside.
5. In the same skillet, add the rice and sauté for 2-3 minutes until lightly toasted.
6. Add the chicken broth and bring to a simmer. Cover and cook for 15-20 minutes until the rice is cooked.
7. While the rice is cooking, cut the broccoli into florets and steam until tender.
8. Once the rice is cooked, fluff it with a fork and stir in the steamed broccoli.
9. Place the seared chicken breasts on top of the broccoli rice mixture.
