Recipe Name: Peanut Butter Chicken Rice Bowl

Ingredients:
- 1 cup rice
- 1 lb chicken breast, diced
- 2 tbsp peanut butter
- 2 eggs
- 1 onion, diced
- 3 cloves garlic, minced
- 1 cup pasta
- 1 cup pasta sauce
- 1 tsp pepper
- 1 tsp salt
- 2 tbsp tomato paste
- 1 cup chicken stock
- 1 cup beef stock
- 1 can black beans, drained and rinsed
- 1 can chickpeas, drained and rinsed
- 2 oranges, peeled and segmented
- 1/2 cup hummus
- 1/4 cup parmesan cheese

Instructions:
1. Cook the rice according to package instructions and set aside.
2. In a large skillet, heat some oil over medium heat and add the diced chicken. Cook until browned on all sides.
3. Add the diced onion and minced garlic to the skillet and sauté until fragrant.
4. Stir in the peanut butter, pasta sauce, tomato paste, chicken stock, and beef stock. Bring to a simmer.
5. Add the black beans and chickpeas to the skillet and let simmer for about 10 minutes.
6. In a separate pan, scramble the eggs and set aside.
7. To assemble the rice bowl, start with a serving of cooked rice in a bowl.
8. Top the rice with the peanut butter chicken mixture.
9. Add the scrambled eggs on top.
10. Garnish with orange segments, hummus, and parmesan cheese.
11. Season with salt and pepper to taste.
