- 2 tablespoons peanut butter
- 1 bunch kale, stems removed and leaves chopped
- 1 bell pepper, sliced

- 1/2 cup almond milk
- 1 cup cooked rice
- 2 cloves garlic, minced
- 1 onion, diced
- Salt and black pepper to taste
- 2 scallions, chopped
- 1 cup sliced mushrooms
Instructions:
1. In a large skillet, heat some oil over medium heat. Add the garlic and onion, and sauté until fragrant.
2. Add the bell pepper and mushrooms to the skillet, and cook until they start to soften.
3. Stir in the kale and cook until wilted.
4. Add the cooked rice to the skillet and mix well with the vegetables.
