- 1 bell pepper, diced
- 1 chicken breast, diced
- 2 eggs
- Salt to taste
Instructions:
1. In a large skillet, heat some oil over medium heat.
2. Add the diced chicken breast to the skillet and cook until it is no longer pink.
3. Push the chicken to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked through.
4. Add the diced bell pepper to the skillet and sauté for a few minutes until slightly softened.
5. Add the cooked rice to the skillet and stir everything together.
