Ingredients:
- 2 sweet potatoes
- 2 chicken breasts, cooked and shredded
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 2 tablespoons butter
- 1/4 cup pesto sauce
- 2 eggs
- 4 slices of bread, toasted and crumbled
Step by Step Guide:
1. Preheat the oven to 400°F (200°C).
2. Wash the sweet potatoes and pierce them with a fork. Place them on a baking sheet and bake for about 45-50 minutes, or until they are tender.
3. In a skillet, melt the butter over medium heat. Add the diced onions and cook until they are translucent.
4. Add the diced tomatoes and shredded chicken to the skillet. Cook for another 5 minutes.
5. Stir in the pesto sauce and crumbled bread. Mix well to combine all the ingredients.
6. Cut the sweet potatoes in half lengthwise and scoop out some of the flesh to create a hollow space.
7. Divide the chicken mixture evenly among the sweet potato halves, creating a well in the center of each.
8. Crack an egg into each well.
9. Place the stuffed sweet potatoes back in the oven and bake for an additional 15-20 minutes, or until the eggs are cooked to your desired doneness.
10. Serve hot and enjoy!
