Recipe Name: Pomelo Honey Candy

Ingredients:
- 1 pomelo
- 1 cup honey
- 1 cup sugar
- 1/2 cup pineapple juice
- Pinch of salt
- Optional: edible flowers for decoration

Instructions:
1. Peel the pomelo and separate the segments. Remove any seeds and white pith, then chop the pomelo into small pieces.
2. In a saucepan, combine the honey, sugar, pineapple juice, and salt. Heat over medium heat, stirring constantly until the sugar is dissolved.
3. Add the chopped pomelo to the saucepan and continue to cook, stirring occasionally, until the mixture thickens and reaches the hard crack stage (about 300°F on a candy thermometer).
4. Remove the saucepan from heat and quickly pour the mixture onto a parchment-lined baking sheet. Spread it out evenly with a spatula.
5. Allow the candy to cool and harden at room temperature for a few hours.
6. Once the candy has hardened, you can cut it into small pieces or break it into chunks. Optionally, decorate with edible flowers for a beautiful presentation.
7. Store the Pomelo Honey Candy in an airtight container at room temperature for up to two weeks.
