- 4 bell peppers
- 1 cup red quinoa
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, diced

- 1 tomato, diced

- Salt and pepper to taste
Step by Step Guide:
1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish.
3. In a medium saucepan, combine the red quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed.
4. In a skillet, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until softened.
5. Add the diced tomato to the skillet and cook for another 2-3 minutes.
6. Stir in the cooked red quinoa and season with salt and pepper to taste.
7. Remove the skillet from heat and stir in the shredded cheese until melted.
8. Stuff the bell peppers with the quinoa mixture and place the tops back on.
9. Bake in the preheated oven for about 25-30 minutes or until the bell peppers are tender.
