Ingredients:
- 2 chicken breasts
- 1/2 cup quinoa
- 1 cup chicken broth
- 1/2 onion, diced
- 1 clove garlic, minced
- 1/2 red bell pepper, diced
- 1/2 zucchini, diced
- 1 teaspoon olive oil
- Salt and pepper to taste

Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a saucepan, bring the chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the liquid is absorbed.
3. In a skillet, heat olive oil over medium heat. Add the onion, garlic, red bell pepper, and zucchini. Cook until vegetables are tender, about 5-7 minutes. Season with salt and pepper.
4. Butterfly the chicken breasts by slicing them horizontally, but not all the way through, and open them like a book.
5. Season the inside of the chicken breasts with salt and pepper. Spoon the cooked quinoa and vegetable mixture onto one side of each chicken breast. Close the chicken breasts to enclose the filling.
6. Place the stuffed chicken breasts in a baking dish. Season the top with a little more salt and pepper.
7. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through.
8. Serve the quinoa stuffed chicken breasts hot and enjoy!
