Recipe Name: Rice and Beans
Ingredients:
- 1 cup of white rice
- 1 can of black beans
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 cups of vegetable broth
- 2 tablespoons of olive oil
Instructions:
1. In a large pot, heat olive oil over medium heat.
2. Add diced onion, minced garlic, and bell pepper to the pot. Cook until softened, about 5 minutes.
3. Stir in cumin, paprika, salt, and pepper. Cook for another minute to toast the spices.
4. Add the white rice to the pot and stir to coat the rice in the spices and vegetables.
5. Pour in the vegetable broth and bring to a simmer.
6. Once simmering, reduce heat to low, cover the pot, and let it cook for about 15-20 minutes, or until the rice is cooked through.
7. Rinse and drain the black beans, then add them to the pot. Stir to combine and heat through.
8. Taste and adjust seasoning if needed.
9. Serve the rice and beans hot, garnished with fresh cilantro or a squeeze of lime juice if desired.
