Ingredients:
- 2 large carrots, peeled and sliced
- 2 medium potatoes, diced
- 1 block of firm tofu, cubed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh herbs for garnish (optional)

Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a large mixing bowl, combine the sliced carrots, diced potatoes, and cubed tofu.
3. Drizzle olive oil over the vegetables and tofu, then sprinkle with garlic powder, paprika, salt, and pepper. Toss gently to coat everything evenly.
4. Spread the mixture in a single layer on a baking sheet lined with parchment paper.
5. Roast in the preheated oven for 30-35 minutes, or until the vegetables are tender and the tofu is golden brown, stirring halfway through.
6. Once roasted, remove from the oven and let it cool slightly.
7. Serve the roasted carrot, potato, and tofu mixture in bowls, garnish with fresh herbs if desired, and enjoy!
