Ingredients:
- 4 yellow russet potatoes
- 1 red onion
- 1 fennel bulb
- 1/4 cup chopped parsley
- 4-5 radishes
- Olive oil
- Salt and pepper

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash and scrub the yellow russet potatoes, then dice them into bite-sized pieces.
3. Slice the red onion and fennel bulb into thin strips.
4. Place the diced potatoes, sliced red onion, and fennel on a baking sheet.
5. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
6. Roast in the preheated oven for about 25-30 minutes, or until the potatoes are golden brown and tender.
7. While the vegetables are roasting, thinly slice the radishes.
8. Once the potatoes are done, remove from the oven and let cool slightly.
9. In a large bowl, combine the roasted potatoes, red onion, fennel, and chopped parsley.
10. Add the sliced radishes and gently toss to combine.
11. Adjust seasoning with salt and pepper if needed.
