Recipe Name: Roasted Vegetable Medley

Ingredients:
- 1 butternut squash, peeled and cubed
- 2 potatoes, peeled and cubed
- 1 leek, sliced
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 shallot, minced
- 1 red pepper, sliced
- 1 fennel bulb, sliced
- 2 cups of fresh spinach
- Mixed salad greens
- 1 beetroot, peeled and diced

Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a large mixing bowl, combine the butternut squash, potatoes, leek, onion, garlic, shallot, red pepper, and fennel.
3. Drizzle with olive oil, season with salt and pepper, and toss to coat the vegetables evenly.
4. Spread the vegetable mixture on a baking sheet in a single layer.
5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized.
6. In a separate bowl, toss the fresh spinach, mixed salad greens, and diced beetroot together.
7. Serve the roasted vegetable medley over the bed of greens and enjoy!
