Ingredients:
- 1 lb salmon fillet, cut into small pieces
- 8 oz noodles of your choice
- 1 can chickpeas, drained and rinsed
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- Salt and pepper to taste
- Green onions, chopped for garnish
Instructions:
1. Cook the noodles according to package instructions. Drain and set aside.
2. In a large skillet, heat the sesame oil over medium heat. Add the garlic and ginger, sauté for 1-2 minutes until fragrant.
3. Add the salmon pieces to the skillet and cook until browned on all sides, about 5-6 minutes.
4. Add the bell pepper and broccoli to the skillet, cook for another 2-3 minutes until slightly softened.
5. Stir in the chickpeas and cooked noodles. Pour in the soy sauce and season with salt and pepper. Mix everything together until well combined.
6. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
7. Remove from heat and garnish with chopped green onions before serving.
