Ingredients:
- 2 cups cooked rice
- 1 bell pepper, diced
- 1 onion, diced
- 2 eggs, beaten
- 2 cloves garlic, minced
- 1/2 lb shrimp, peeled and deveined
- Salt and pepper to taste
Instructions:
1. Heat some oil in a large skillet or wok over medium-high heat.
2. Add the diced bell pepper and onion to the skillet and sauté until they start to soften, about 3-4 minutes.
3. Add the minced garlic and shrimp to the skillet and cook until the shrimp turn pink and opaque, about 2-3 minutes.
4. Push the ingredients to one side of the skillet and pour the beaten eggs into the empty side. Scramble the eggs until cooked through.
5. Add the cooked rice to the skillet and stir everything together.
6. Season with salt and pepper to taste, and continue to cook for another 2-3 minutes, stirring occasionally.
7. Once everything is heated through and well combined, remove from heat.
8. Serve the shrimp fried rice hot and enjoy!
