Ingredients:
- 1 cup prunes, pitted and chopped
- 1 1/2 cups flour
- 1 cup golden syrup
- 1 tsp baking soda
- 1/2 tsp ground clove
- 1/2 tsp ground nutmeg
- 1/2 cup butter, softened
Instructions:
1. Preheat the oven to 350°F (180°C) and grease a 9-inch round cake pan.
2. In a small saucepan, combine the prunes and golden syrup. Cook over low heat until the prunes are softened, about 5 minutes. Remove from heat and let it cool.
3. In a mixing bowl, cream the butter until smooth. Add the flour, baking soda, clove, and nutmeg. Mix until well combined.
4. Fold in the prune mixture until evenly distributed in the batter.
5. Pour the batter into the prepared cake pan and smooth the top.
6. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
