Ingredients:
- 4 eggs
- Nori sheets
- 1 spring onion, chopped
- Siracha sauce
- Mayonnaise
- 2 cups cooked rice
- 2 tablespoons rice vinegar
- Spanish green paprika
- 6 strips of bacon
- Tomato salsa

Instructions:
1. Cook the bacon until crispy, then chop into small pieces.
2. In a bowl, whisk the eggs and cook them to make a fluffy omelette. Once cooked, slice into strips.
3. Mix the cooked rice with rice vinegar to make sushi rice.
4. Lay a sheet of nori on a bamboo sushi mat.
5. Spread a layer of sushi rice on the nori sheet, leaving a border at the top.
6. Arrange the bacon, egg strips, chopped spring onion, and a drizzle of Siracha and mayonnaise on top of the rice.
7. Roll the sushi burrito tightly using the bamboo mat, sealing the edge with a bit of water.
8. Slice the sushi burrito into bite-sized pieces.
9. Serve with a sprinkle of Spanish green paprika and a side of tomato salsa.
