Ingredients:
- 2 cups cooked rice
- 1 chicken breast, diced
- 1 bell pepper, diced
- 1 tomato, diced
- Salt to taste
- 2 eggs
- 2 tbsp vegetable oil
- 1 tsp soy sauce (optional)
Instructions:
1. In a large skillet, heat 1 tbsp of vegetable oil over medium-high heat.
2. Add the diced chicken breast and cook until browned and cooked through.
3. Push the chicken to one side of the skillet and add the remaining vegetable oil.
4. Crack the eggs into the skillet and scramble them until cooked.
5. Add the diced bell pepper and tomato to the skillet and sauté for a few minutes until slightly softened.
6. Add the cooked rice to the skillet and stir everything together.
7. Season with salt and soy sauce (if using) and mix well.
8. Cook for another 2-3 minutes, stirring occasionally.
9. Remove from heat and serve hot.
