- 1/2 tsp hing powder
- 1 tsp haldi powder
- 1 tsp red chili powder
- 1 tsp cumin seeds
- 1 tsp cumin powder
- 1 onion, chopped
- 2 potatoes, peeled and diced
- 2 tomatoes, chopped
- 3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 eggs
- Salt to taste
- Oil for cooking
Step by Step Guide:
1. Heat oil in a pan over medium heat.
2. Add cumin seeds and let them splutter.
3. Add chopped onions and sauté until they turn translucent.
4. Add minced garlic and grated ginger, sauté for another minute.
5. Add hing powder, haldi powder, red chili powder, and cumin powder. Mix well.
6. Add diced potatoes and cook until they are slightly tender.
7. Add chopped tomatoes and cook until they soften.
8. Crack the eggs into the pan and gently mix with the potato and tomato mixture.
9. Cover and cook until the eggs are cooked to your liking.
10. Season with salt and adjust spices if needed.
11. Serve hot with rice or bread.
