Ingredients:
- 1 cup vermicelli
- 1 tomato, diced
- 1 green chilli, chopped
- 1 onion, sliced
- 1 egg
- Handful of curry leaves
- Handful of coriander leaves
- 1 carrot, grated
Instructions:
1. Cook the vermicelli according to package instructions, then drain and set aside.
2. In a large pan, heat some oil over medium heat.
3. Add the sliced onion and sauté until translucent.
4. Add the diced tomato, chopped green chilli, and grated carrot. Cook until the vegetables are slightly softened.
5. Push the vegetables to one side of the pan and crack the egg into the empty space.
6. Scramble the egg until cooked, then mix it with the vegetables.
7. Add the cooked vermicelli to the pan and toss everything together.
8. Season with salt and pepper to taste.
9. Garnish with curry leaves and coriander leaves before serving.
