Ingredients:
- 4 large potatoes
- 1 lb mince
- 2 cups fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1 onion, diced
- Salt and pepper to taste

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash the potatoes and pierce them with a fork. Bake in the preheated oven for about 45-60 minutes, or until they are cooked through.
3. In a skillet, cook the mince over medium heat until browned. Add the diced onion and cook until translucent.
4. Add the chopped spinach to the skillet and cook until wilted.
5. Remove the skillet from heat and stir in the crumbled feta cheese. Season with salt and pepper to taste.
6. Once the potatoes are cooked, remove them from the oven and let them cool slightly.
7. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin shell.
8. Mash the potato flesh and mix it with the spinach, mince, and feta mixture.
9. Stuff the potato shells with the filling and place them back in the oven for an additional 10-15 minutes, or until heated through.
10. Serve the stuffed potatoes hot and enjoy!
