Ingredients:
- 1 lb ground beef
- 1 lb ground sausage
- 4 bell peppers
- 1 cup rice
- 1 cup shredded cheese
- 1 onion, diced
- 2 cloves garlic, minced
- Salt to taste
- 1 tomato, diced
- 1 avocado, sliced
Instructions:
1. Preheat the oven to 375°F (190°C).
2. In a skillet, cook the ground beef and ground sausage over medium heat until browned. Drain any excess fat.
3. Cook the rice according to package instructions.
4. In a large bowl, mix together the cooked ground beef, ground sausage, cooked rice, diced onion, minced garlic, salt, diced tomato, and half of the shredded cheese.
5. Cut the tops off the bell peppers and remove the seeds and membranes.
6. Stuff the bell peppers with the meat and rice mixture.
7. Place the stuffed bell peppers in a baking dish and cover with foil.
8. Bake in the preheated oven for 25-30 minutes.
9. Remove the foil, sprinkle the remaining shredded cheese on top of the stuffed bell peppers, and bake for an additional 5-10 minutes until the cheese is melted and bubbly.
10. Serve the stuffed bell peppers hot with sliced avocado on the side.
