Ingredients:
- 4 bell peppers
- 1 onion, diced
- 1 red pepper, diced
- 1 lb ground meat (beef, turkey, or chicken)
- Salt and pepper to taste
- 1 cup cooked rice
- 1 cup tomato sauce
- 1 cup shredded cheese

Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
3. In a skillet, cook the diced onion and red pepper until softened.
4. Add the ground meat to the skillet and cook until browned. Season with salt and pepper.
5. Stir in the cooked rice and tomato sauce, mixing well.
6. Stuff each bell pepper with the meat mixture and place them in a baking dish.
7. Cover the dish with foil and bake for 25 minutes.
8. Remove the foil, sprinkle shredded cheese on top of each stuffed pepper, and bake for an additional 10 minutes or until the cheese is melted and bubbly.
9. Serve hot and enjoy!
