Ingredients:
- 4 bell peppers
- 1 cup cooked rice
- 1 small onion, diced
- 1/2 lb ground meat (beef, turkey, or chicken)
- 2 cloves garlic, minced
- 2 tablespoons chopped parsley
- Salt and pepper to taste
- 2 eggs
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds and membranes from the inside.
3. In a skillet, heat some oil over medium heat and sauté the onions until translucent.
4. Add the ground meat to the skillet and cook until browned, breaking it up with a spoon as it cooks.
5. Stir in the minced garlic and cook for another minute.
6. Remove the skillet from the heat and stir in the cooked rice, chopped parsley, salt, and pepper.
7. In a small bowl, beat the eggs and then mix them into the meat and rice mixture.
8. Stuff each bell pepper with the meat and rice mixture and place them in a baking dish.
9. Cover the dish with foil and bake in the preheated oven for 30 minutes.
10. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the tops are slightly browned.
11. Serve the stuffed bell peppers hot and enjoy!
