Ingredients:
- 4 large bell peppers
- 1/2 lb ground beef
- 1/2 cup cooked rice
- 1/2 onion, diced
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup diced tomatoes
- 2 tbsp butter
- 2 tbsp flour
- 2 potatoes, peeled and diced

Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
3. In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
4. Add the diced onions to the skillet and cook until softened.
5. Stir in the cooked rice, salt, pepper, and diced tomatoes. Cook for another 2-3 minutes.
6. Stuff the bell peppers with the beef and rice mixture.
7. In a separate saucepan, melt the butter over medium heat. Stir in the flour to make a roux.
8. Slowly add in 1 cup of water, stirring constantly until the sauce thickens.
9. Pour the sauce over the stuffed bell peppers.
10. Place the diced potatoes around the peppers in the baking dish.
11. Cover the dish with foil and bake for 30 minutes.
12. Remove the foil and bake for an additional 10-15 minutes, or until the potatoes are tender.
13. Serve the stuffed bell peppers with beef and rice hot and enjoy!
