Ingredients:
- 4 bell peppers
- 2 potatoes, boiled and mashed
- 1 tomato, diced
- 1 onion, diced
- 100g blue cheese, crumbled
- 1 carrot, grated
- 2 eggs
- Salt, to taste
- Black pepper, to taste
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
3. In a mixing bowl, combine the mashed potatoes, diced tomato, diced onion, crumbled blue cheese, grated carrot, eggs, salt, and black pepper. Mix well to combine.
4. Stuff each bell pepper with the potato mixture, filling them to the top.
5. Place the stuffed bell peppers in a baking dish and cover with foil.
6. Bake in the preheated oven for 30 minutes.
7. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the tops are slightly browned.
8. Serve hot and enjoy!
