Ingredients:
- 4 large carrots
- 2 tablespoons tomato paste
- 1 onion, diced
- 1 cup cheese, grated
- 2 eggs
- 1 cup rice
- Salt and pepper to taste

Instructions:
1. Preheat the oven to 375°F (190°C).
2. Wash and peel the carrots. Cut off the tops and bottoms of the carrots, then carefully hollow out the center using a small knife or a vegetable corer.
3. In a saucepan, cook the rice according to package instructions. Once cooked, let it cool slightly.
4. In a separate pan, sauté the diced onion until translucent.
5. In a bowl, mix together the cooked rice, sautéed onion, tomato paste, grated cheese, and eggs. Season with salt and pepper.
6. Stuff each hollowed-out carrot with the rice mixture, pressing it down gently.
7. Place the stuffed carrots on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the carrots are tender.
8. Serve the stuffed carrots hot and enjoy!
