Ingredients:
- 4 large potatoes
- 1/2 lb minced meat
- 2 eggs
- 2 tbsp soy sauce
- 1/2 tsp pepper
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash the potatoes and pierce them with a fork. Bake them in the oven for about 45 minutes or until they are cooked through.
3. While the potatoes are baking, cook the minced meat in a skillet over medium heat until browned. Season with pepper and soy sauce.
4. Once the potatoes are cooked, let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin layer of potato inside the skin.
5. In a bowl, mix the scooped-out potato flesh with the cooked minced meat mixture.
6. Fill each potato skin with the meat and potato mixture.
7. Beat the eggs and brush the tops of the stuffed potato skins with the beaten eggs.
8. Place the stuffed potato skins back in the oven and bake for an additional 15-20 minutes, or until the tops are golden brown.
9. Serve hot and enjoy!
