Recipe Name: Stuffed Potato Skins

Ingredients:
- 4 medium potatoes
- 1 egg
- Salt
- Dried oregano
- Black pepper
- Red pepper flakes
- 1 tomato, diced
- 4 sausages, cooked and diced
- Mayonnaise
- 1 onion, diced

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash the potatoes and bake them in the oven until they are cooked through, about 45-60 minutes.
3. Let the potatoes cool slightly, then cut them in half lengthwise and scoop out the flesh, leaving a thin layer of potato inside the skins.
4. In a bowl, mix the potato flesh with the egg, salt, oregano, black pepper, and red pepper flakes.
5. Fill each potato skin with the mixture and top with diced tomato, sausage, and onion.
6. Place the stuffed potato skins back in the oven and bake for another 15-20 minutes, until the tops are golden brown.
7. Serve hot with a dollop of mayonnaise on top.
