Recipe Name: Stuffed Potato Skins

Ingredients:
- 4 large potatoes
- 1 lb ground meat
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 2 eggs
- Lettuce and cabbage for garnish

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash the potatoes and prick them with a fork. Bake the potatoes in the oven for about 45-50 minutes, or until they are tender.
3. While the potatoes are baking, heat olive oil in a skillet over medium heat. Add the ground meat and cook until browned. Season with salt and set aside.
4. Once the potatoes are cooked, let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin layer of potato inside the skin.
5. In a bowl, mix the scooped out potato flesh with the cooked ground meat mixture. Add in the eggs and mix well to combine.
6. Stuff the potato skins with the meat and potato mixture.
7. Place the stuffed potato skins back in the oven and bake for an additional 15-20 minutes, or until the tops are golden brown.
8. Serve the stuffed potato skins garnished with shredded lettuce and cabbage.
