Ingredients:
- 4 large potatoes
- 1 small onion, finely chopped
- 1 tomato, diced
- 1/2 cup hummus
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash the potatoes and prick them with a fork. Rub them with coconut oil and sprinkle with salt. Bake in the oven for about 45-50 minutes, or until they are tender.
3. While the potatoes are baking, heat olive oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
4. Add the diced tomato to the pan and cook for another 2-3 minutes. Season with salt and pepper to taste.
5. Remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin layer of potato inside the skins.
6. Mash the scooped-out potato flesh with hummus in a bowl. Season with salt and pepper.
7. Fill each potato skin with the hummus-potato mixture.
8. Place the stuffed potato skins back in the oven for another 10-15 minutes, until they are heated through.
9. Serve the stuffed potato skins hot, garnished with a drizzle of olive oil and a sprinkle of chopped parsley if desired.
