Ingredients:
- 2 Summer Squash, sliced
- 2 Sweet Corn, kernels removed
- 1 Eggplant, diced
- 3 Tomatoes, diced
- 1 cup Cherry Tomatoes, halved
- 2 cloves Garlic, minced
- 1 Onion, diced
- 2 tbsp Olive Oil
- Salt and Pepper to taste
- Fresh Herbs (such as basil or parsley) for garnish

Instructions:
1. In a large skillet, heat olive oil over medium heat.
2. Add the minced garlic and diced onion, sauté until fragrant.
3. Add the sliced summer squash, diced eggplant, and sweet corn kernels to the skillet. Cook for about 5 minutes until slightly softened.
4. Stir in the diced tomatoes and cherry tomatoes. Season with salt and pepper.
5. Cover the skillet and let the vegetables simmer for about 10-15 minutes, stirring occasionally.
6. Once the vegetables are tender, taste and adjust seasoning if needed.
