- 2 Summer Squash, sliced

- 1 Eggplant, diced

- 1 Onion, diced
- 2 tbsp Olive Oil
- Salt and Pepper to taste

Instructions:
1. In a large skillet, heat olive oil over medium heat.
2. Add the minced garlic and diced onion, sauté until fragrant.
