- 1 cup of rice
- 1 block of firm tofu, crumbled
- 1/2 cup of crumbled feta cheese
- 1 cup of tomato sauce
- 2 tomatoes, diced
- 4 large bell peppers
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Cook the rice according to package instructions and set aside.
3. Cut the tops off the bell peppers and remove the seeds and membranes.
4. In a mixing bowl, combine the crumbled tofu, feta cheese, diced tomatoes, and cooked rice.
5. Stuff each bell pepper with the tofu and feta mixture.
6. Place the stuffed peppers in a baking dish and pour the tomato sauce over the top.
7. Cover the dish with foil and bake in the preheated oven for 30-35 minutes, or until the peppers are tender.
8. Remove the foil and bake for an additional 5-10 minutes to brown the tops.
