Ingredients:
- 1 block of firm tofu
- 1 cup of rice
- 1 onion
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 clove of garlic, minced
- 1 bell pepper, sliced
- 1 carrot, julienned
- Salt and pepper to taste
- Green onions for garnish
Instructions:
1. Press the tofu to remove excess water, then cut it into cubes.
2. Cook the rice according to package instructions and set aside.
3. Heat some oil in a pan over medium heat and add the tofu cubes. Cook until golden brown on all sides, then remove from the pan and set aside.
4. In the same pan, add a bit more oil and sauté the onion, garlic, bell pepper, and carrot until they start to soften.
5. Add the cooked rice to the pan and stir in the soy sauce and sesame oil. Cook for a few more minutes to let the flavors meld together.
6. Gently fold in the cooked tofu cubes and season with salt and pepper to taste.
7. Serve the tofu stir-fry over rice and garnish with sliced green onions.
