Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 1 can (14 oz) diced tomatoes
- 1 cup cooked chicken, shredded
- 4 eggs
- Fresh parsley, chopped (for garnish)
Instructions:
1. Heat olive oil in a large skillet over medium heat.
2. Add the chopped onion and cook until softened, about 5 minutes.
3. Stir in the minced garlic and diced red bell pepper, cooking for another 2-3 minutes.
4. Add the cumin, paprika, chili powder, salt, and pepper, stirring to combine.
5. Pour in the diced tomatoes and cooked chicken, stirring well.
6. Make 4 wells in the tomato mixture and crack an egg into each well.
7. Cover the skillet and let the eggs cook to your desired doneness, about 5-7 minutes for runny yolks.
8. Garnish with chopped parsley before serving.
