Ingredients:
- 2 cups cooked rice
- 2 eggs
- 1 onion, diced
- 1 tomato, diced
- Salt and pepper to taste
- Soy sauce (optional)
- Vegetable oil

Instructions:
1. In a large skillet or wok, heat some vegetable oil over medium heat.
2. Add the diced onion and cook until translucent.
3. Push the onion to one side of the skillet and crack the eggs into the empty side.
4. Scramble the eggs until cooked through, then mix them with the onion.
5. Add the diced tomato to the skillet and cook for a few minutes until softened.
