Ingredients:
- 1 onion, finely chopped
- 2 tomatoes, diced
- 250g pasta of your choice
- 4 eggs
- Salt and pepper to taste
- Olive oil
- Fresh basil leaves for garnish

Instructions:
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat some olive oil over medium heat. Add the chopped onion and sauté until translucent.
3. Add the diced tomatoes to the skillet and cook until they start to soften.
4. Season with salt and pepper to taste.
5. Add the cooked pasta to the skillet and toss to combine with the tomato and onion mixture. Cook for another 2-3 minutes to allow the flavors to meld.
6. In a separate pot, bring water to a gentle simmer. Crack each egg into a small bowl and gently slide them into the simmering water. Poach the eggs for about 3-4 minutes until the whites are set but the yolks are still runny.
7. Using a slotted spoon, carefully remove the poached eggs from the water and place them on top of the pasta.
