Ingredients:
- 1 lb chicken breast, diced
- 1 cup rice
- 1 onion, chopped
- 2 tomatoes, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil

Step by Step Guide:
1. In a large skillet, heat some olive oil over medium heat.
2. Add the diced chicken breast and cook until browned on all sides.
3. Remove the chicken from the skillet and set aside.
4. In the same skillet, add a bit more olive oil if needed and sauté the chopped onion until translucent.
5. Add the minced garlic and cook for another minute.
6. Stir in the diced tomatoes and cook until they start to soften.
7. Add the rice to the skillet and stir to coat it with the vegetable mixture.
8. Pour in the chicken broth and season with paprika, salt, and pepper.
9. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
10. Once the rice is cooked, add the cooked chicken back to the skillet and stir to combine.
