Ingredients:
- 1 cup rice
- 4 chicken thighs
- 1 onion, chopped
- 1 can diced tomatoes

Instructions:
1. In a large skillet, heat some oil over medium heat.
2. Add the chopped onions and cook until they are soft and translucent.
3. Add the chicken thighs to the skillet and cook until they are browned on all sides.
4. Pour in the can of diced tomatoes and stir to combine.
5. Add the rice to the skillet and mix well with the other ingredients.
6. Pour in enough water to cover the rice and chicken mixture.
7. Cover the skillet and let it simmer on low heat for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
8. Once everything is cooked through, remove from heat and let it sit for a few minutes before serving.
9. Serve the tomato chicken rice hot and enjoy!
