Recipe Name: Turkey and Shrimp Quinoa Stir-Fry
Ingredients:
- 1 lb ground turkey
- 1/2 lb shrimp, peeled and deveined
- 2 zucchinis, sliced
- 2 tomatoes, diced
- 1 head of broccoli, cut into florets
- 1 cup quinoa, rinsed
- 2 tbsp olive oil
- Salt and pepper to taste
- Soy sauce for seasoning
Instructions:
1. In a large skillet, heat 1 tbsp of olive oil over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon as it cooks.
2. Add the shrimp to the skillet and cook until they turn pink and opaque, about 2-3 minutes. Remove the turkey and shrimp from the skillet and set aside.
3. In the same skillet, add the remaining olive oil and sauté the zucchini, tomatoes, and broccoli until they are slightly tender, about 5-7 minutes.
4. Meanwhile, in a separate pot, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and the water is absorbed.
5. Once the vegetables are tender, add the cooked turkey and shrimp back to the skillet. Season with salt, pepper, and soy sauce to taste.
6. Serve the turkey and shrimp stir-fry over the cooked quinoa. Enjoy!
