Ingredients:
- 2 cups of cooked rice
- 1 cup of mixed vegetables (carrots, peas, bell peppers, corn)
- 2 cloves of garlic, minced
- 1 small onion, diced
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 2 eggs, beaten
- Salt and pepper to taste
- Green onions for garnish
Step by Step Guide:
1. Heat a large skillet or wok over medium heat and add sesame oil.
2. Add minced garlic and diced onion, sauté until fragrant.
3. Push the garlic and onion to one side of the skillet, pour the beaten eggs into the other side. Scramble the eggs until cooked through.
4. Add the mixed vegetables to the skillet and stir-fry for a few minutes until they are slightly tender.
5. Add the cooked rice to the skillet and mix well with the vegetables.
6. Pour soy sauce over the rice and vegetables, stir to combine.
7. Season with salt and pepper to taste.
8. Continue to stir-fry the fried rice for another 2-3 minutes until everything is heated through.
9. Garnish with chopped green onions before serving.
