Ingredients:
- 2 cups cooked rice
- 2 eggs
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1/2 teaspoon salt
- 2 tomatoes, diced
- 1 carrot, diced
Instructions:
1. In a large skillet or wok, heat some oil over medium heat.
2. Add the diced onion and bell pepper, and sauté until they start to soften.
3. Push the vegetables to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until cooked through.
4. Add the minced garlic to the skillet and sauté for another minute.
5. Stir in the cooked rice, salt, diced tomatoes, and diced carrots. Mix everything well to combine.
6. Cook for a few more minutes until the rice is heated through and the vegetables are tender.
7. Taste and adjust seasoning if needed.
