Ingredients:
- 2 cups cooked rice
- 1 cup mixed vegetables (carrots, peas, bell peppers, corn)
- 2 cloves garlic, minced
- 1 small onion, diced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 eggs, beaten
- Salt and pepper to taste
- Green onions for garnish

Step by Step Guide:
1. Heat a large skillet or wok over medium heat.
2. Add sesame oil and sauté garlic and onion until fragrant.
3. Add mixed vegetables and cook until slightly tender.
4. Push vegetables to one side of the pan and pour beaten eggs on the other side.
5. Scramble the eggs until cooked through, then mix with the vegetables.
6. Add cooked rice to the pan and stir well to combine with the vegetables and eggs.
7. Pour soy sauce over the rice and mix until everything is evenly coated.
8. Season with salt and pepper to taste.
9. Cook for another 2-3 minutes, stirring occasionally.
10. Garnish with chopped green onions before serving.
