Ingredients:
- 2 cups cooked rice
- 2 eggs
- 1 onion, chopped
- 1 tomato, diced
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 1 bell pepper, sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions:
1. In a large skillet, heat some oil over medium heat.
2. Add the chopped onion and minced garlic, sauté until fragrant.
3. Push the onion and garlic to one side of the skillet and crack the eggs into the empty space. Scramble the eggs until cooked through.
4. Add the mixed vegetables and sliced bell pepper to the skillet. Cook until slightly tender.
5. Stir in the cooked rice and diced tomato. Mix well to combine all the ingredients.
6. Season with salt and pepper to taste. Stir fry for a few more minutes until everything is heated through.
