Ingredients:
- 1 carrot, diced
- 2 cloves of garlic, minced
- 1 potato, peeled and diced
- 1 onion, chopped
- 1 cup of green beans, chopped
- 2 tomatoes, diced
- Salt to taste
- 1 cup of quinoa
- 4 eggs

Step by Step Guide:
1. Preheat the oven to 375°F (190°C).
2. In a large skillet, heat some oil over medium heat. Add the diced carrots, minced garlic, diced potato, and chopped onion. Cook until the vegetables are softened, about 5-7 minutes.
3. Add the chopped green beans and diced tomatoes to the skillet. Cook for another 3-4 minutes.
4. Stir in the quinoa and cook for 1-2 minutes to toast the grains slightly.
5. Season the mixture with salt to taste.
6. In a separate bowl, beat the eggs and pour them over the vegetable-quinoa mixture in the skillet.
7. Cook on the stovetop for 3-4 minutes until the edges start to set.
8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and slightly golden on top.
9. Remove from the oven and let it cool slightly before slicing and serving.
