Ingredients:
- 4 sweet potatoes
- 1 can of refried beans
- 1 tsp garlic powder
- 1 bell pepper, diced
- 1 small onion, diced
- 1 small beet, cooked and diced
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Wash the sweet potatoes and pierce them with a fork. Place them on a baking sheet and bake for 45-60 minutes, or until they are tender.
3. In a skillet, heat some oil over medium heat. Add the diced onions and bell peppers, and sauté until they are softened.
4. Add the refried beans, garlic powder, and diced beets to the skillet. Stir well to combine and cook for another 2-3 minutes.
5. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Cut them in half lengthwise and carefully scoop out some of the flesh to create a well for the filling.
6. Fill each sweet potato half with the refried bean mixture. Top with shredded cheese.
7. Place the stuffed sweet potatoes back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
8. Serve hot and enjoy!
