Nasi Goreng
Ingredients:
- 2 cups cooked white rice
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 red bell pepper, diced
- 1 carrot, diced
- 1/2 cup frozen peas
- 2 tablespoons soy sauce
- 2 tablespoons sweet soy sauce
- 1 teaspoon sambal oelek (optional)
- 2 eggs
- 2 tablespoons chopped scallions
Instructions:
1. Heat the oil in a large skillet over medium heat. Add the garlic, onion, bell pepper, and carrot, and cook until the vegetables are softened, about 5 minutes.
2. Add the peas and cook for another minute.
3. Add the cooked rice and stir to combine.
4. In a small bowl, mix together the soy sauce, sweet soy sauce, and sambal oelek (if using). Pour the mixture over the rice and vegetables and stir to combine.
5. Push the rice mixture to one side of the skillet and crack the eggs into the other side. Scramble the eggs and mix them into the rice.
6. Cook until the eggs are cooked through and the rice is heated through, about 5 minutes.
7. Serve the nasi goreng topped with the chopped scallions. Enjoy!
