Make Nhoque de Milho (Corn Gnocchi)
Recipe: Nhoque de Milho (Corn Gnocchi)
Ingredients:
- 2 cups corn kernels
- 1 cup potato, boiled and mashed
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 egg
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
1. In a food processor, blend the corn kernels until smooth.
2. In a mixing bowl, combine the corn puree, mashed potato, flour, Parmesan cheese, egg, salt, and pepper. Mix well to form a dough.
3. Divide the dough into small portions and roll each portion into a long rope on a floured surface.
4. Cut the ropes into bite-sized pieces to form the gnocchi.
5. Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water and cook until they float to the surface, about 2-3 minutes.
6. Remove the gnocchi with a slotted spoon and transfer to a plate.
7. Heat olive oil in a skillet over medium heat. Add the cooked gnocchi and sauté until lightly browned.
8. Serve the corn gnocchi hot, garnished with grated Parmesan cheese and fresh herbs if desired.
