Recipe Name: Nigerian Owo Soup
Ingredients:
- 500g assorted meat (beef, cow tripe, goat meat)
- 1 cup palm oil
- 2 onions, chopped
- 3 bell peppers, chopped
- 2 scotch bonnet peppers, chopped
- 2 tablespoons ground crayfish
- 2 tablespoons locust beans (iru)
- 2 cups water
- Salt to taste
- Stock cubes
- 1 bunch of ugwu leaves, chopped
Instructions:
1. In a large pot, boil the assorted meat with some salt and stock cubes until tender.
2. In a separate pot, heat the palm oil and sauté the chopped onions until translucent.
3. Add the chopped bell peppers and scotch bonnet peppers to the pot and cook for a few minutes.
4. Stir in the ground crayfish and locust beans, and cook for another 5 minutes.
5. Pour in the cooked assorted meat along with the stock into the pot.
6. Add water to achieve your desired consistency and season with salt and stock cubes.
7. Allow the soup to simmer for about 10-15 minutes.
8. Finally, add the chopped ugwu leaves and cook for an additional 5 minutes.
9. Serve the Owo soup hot with pounded yam or starch.
